Delicious, round, golden-yellow roots with a sweet, mild flavour and less earthy taste than red beets. Unlike red beets, they won't leave deep red stains on hands or clothing. Both roots and tender leafy greens are edible. Enjoy the roots roasted, steamed, pickled or fresh, and sauté the greens like spinach!
