Cyperus esculentus. Bushy, grass-like plants produce edible tubers underground with a sweet, nutty almond-like flavor. Highly nutritious and versatile, tubers are perfect for snacking or baking. Plants form dense clumps and stay about 12″ tall, thriving in warm, sunny, well-drained soil. Also known as Tiger Nut, Earth Almond.

Start tubers or seeds indoors 4–6 weeks before last frost. Plant 1–2″ deep, spacing 6–12″ apart in rows 12–18″ apart. Keep evenly moist. Harvest tubers after the foliage dies back in fall.
